- Le Careme is Crowned Heads' dessert course, named for Marie-Antoine Careme, the first celebrity chef of post-revolutionary France. Ernesto Perez-Carrillo's Tabacalera La Alianza rolls it in the Dominican Republic from a dark Grade-A Connecticut Broadleaf wrapper, Ecuadorian Sumatra binder and Nicaraguan filler. It debuted in 2016 as the house's soft-pressed, chocolate-leaning counterweight to Four Kicks.
